Meet Head Chef Sushil Jungrana: The New Energy Behind Our Kitchen

Saros Logo

There’s a quiet confidence in the Saros kitchen right now, a sense that something exciting is taking shape. You’ll notice it in the balance of bold and familiar flavours, in the kind of dishes that are rooted in tradition but gently reimagined for the modern table.

That shift comes from the hands of Saros Bar and Dining’s new Head Chef, Sushil Jungrana.

Rooted in Technique, Ready to Explore

Sushil doesn’t believe in favourites. For him, cooking is a journey of discovery. He explores flavour, texture, and ingredients across cuisines and cultures.

If he had to choose, though, he would lean toward the warmth of Mediterranean and Italian cooking. That passion shows in the way he prepares pasta, slow-cooked ragu, grilled meats, and seafood. Each dish reflects patience, balance, and just the right touch of flair.

With experience in Melbourne kitchens such as Hero at ACMI, Mr. Wolf, and Higher Ground, Sushil brings both skill and curiosity. His cooking is less about attention and more about intention.

Chef Sushil Jungrana's Philosophy for Saros

Sushil’s vision for Saros is straightforward. He wants to contribute what he has learned over the years and continue building a space where quality food and community meet. The core values are fresh ingredients, a seasonal focus, and a calm approach to elevated dining. However, his input adds a new perspective.

I want to cook food that feels honest, dishes made with good ingredients, handled with care, and served in a way that makes people feel welcome.

It’s a mindset that blends growth and care, and one that reflects in the way our kitchen continues to evolve.

What’s Coming to The Table

You’ll start to see some quiet evolutions on the menu, especially in dishes that carry the signature of the new chef’s hand. Think slow-braised meats with depth, pastas with delicate restraint, and mains grilled to perfection, the kind of food celebrated by Melbourne’s dining scene for its ability to balance comfort and sophistication.

Pair that with a French 75 or something from our Happy Hour menu, and you’ve got a night worth remembering.

A New Chapter at Saros

As Saros continues to grow as a destination for relaxed, high-quality dining in Moonee Ponds, we’re proud to have Sushil leading our kitchen. He brings with him a sense of purpose, a curiosity for flavour, and a genuine passion for cooking.
